Thomas Edison EnergySmart Charter School was excited to launch the 7-Day Vegan Challenge from February 9–15, 2026. This engaging, educational initiative invited students to explore plant-based eating, learn about nutrition, and consider how everyday food choices affect personal health, the environment, and the wider world. Students were encouraged to try eating entirely plant-based meals for seven days—or participate at a level that felt right for them and their families. The goal was not perfection, but curiosity, learning, and discovery.
The challenge gave students an opportunity to experience veganism firsthand while thinking critically about food systems and sustainability. Throughout the week, students sampled new foods, learned simple recipes, and connected plant-based eating to topics such as personal well-being, environmental responsibility, and cultural traditions. The project also supported broader educational goals, including science literacy, environmental awareness, and informed decision-making.
Each day featured a theme—such as vegan breakfasts, easy snacks, or sustainable dinners—and students were invited to document their experiences through photos, reflections, or journal entries. Teachers offered optional classroom activities like recipe exchanges, nutrition lessons, or discussions about global food systems to foster collaboration and community support.
Families received an informational letter explaining the purpose and flexibility of the challenge, ensuring participation feels accessible to everyone. Students were encouraged to talk with their families and make choices that align with their household’s needs.
The 7-Day Vegan Challenge emphasizes inclusivity and respect for diverse choices. Students were not expected to become vegan afterward but to reflect on their experiences and perhaps adopt one or two plant-based habits that feel meaningful. By participating, students took an active role in their well-being and helped build a healthier, more compassionate, and sustainable school community.
